My Story: From the Peruvian Jungle to Seattle
I am Joe Tuesta, a Peruvian chef born in the jungle of Satipo, Junín, and raised in the Amazonas region. My childhood was filled with fresh food, free-range animals, and family businesses, including a store and a bar where my mother, an extraordinary cook, won everyone over with her dishes. It was in that environment, witnessing her passion for cooking, that my love for this profession was born.
After moving to Lima, I studied gastronomy while working in various kitchens. My experience at a Japanese restaurant sparked my passion for Peruvian-Japanese fusion, a craft I refined while working in cevicherías, hotels, and restaurants.
In 2015, I arrived in Seattle with big dreams but faced challenges like the language barrier. However, my perseverance helped me build a solid career. In December 2021, during the pandemic, I fulfilled my dream of opening my own restaurant, where I celebrate Peruvian roots and fusion cuisine. Today, I continue to share my flavors and my story with pride.
